On edge grain cutting boards the wood fibers run parallel to the surface providing a smoother and easier to clean surface. They offer a more affordable option than end grain but more durable and slightly more knife friendly than face grain cutting boards. End grain cutting boards, also known as butcher block, are more expensive because of their labor intensive manufacturing process. Their wood fibers are perpendicular which provides several advantages. They are renowned for their longevity and resistance to wear and tear while also reducing dulling and chipping of knives. They are also naturally resistance to bacteria and moisture.
